The story of Un Caffe began in Florence, Oregon in 1998, and continues on in Reno, Nevada with stops in between at the Culinary Institute of America in Hyde Park, in Italy, and in Washington, D.C.

The Story Of Un Caffe’ Italian Bistro

The story of Un Caffe began in 1998 in Florence, Oregon where Executive Chef/Owner Cheri’ Rhodes operated two food businesses—a delicatessen and a bakery and restaurant.

Chef Cheri’ grew up loving baking and cooking, which she learned during visits to her grandmother’s house in Sparks, Nevada.  In the years since, she decided she wanted to be a professional chef, so she enrolled in the Culinary Institute of America (CIA) in Hyde Park, New York in January 2008 and graduated with honors on the Dean’s List in November 2009.  While at the CIA, Chef Cheri’ did an externship at the 2941 Restaurant in Falls Church, Virginia.  She worked for seven months under Chef Bertrand Chemel.  Chef Chemel is one of the top chefs in Washington, D.C., who in turn had worked for Chef Daniel Boulud and Chef Laurent Tourondel, both of whom are celebrity chefs in New York City.

After graduating from the CIA, Chef Cheri’ traveled to Italy for a vacation and a working holiday.  The idea for Un Caffe’ began with that trip to Italy, where she fell in love with the Italian coffee bars with their high service levels and the wonderful trattorias and osterias with their authentic Italian cookery.  Chef Cheri’ took hundreds of photos of various pasta dishes and other menu items in the cities she visited, and researched the ingredients that made each dish so special.  Several of the dishes she researched became signature dishes for Un Caffe’.

Chef Cheri’ came to Reno in June 2010 and worked as Front of the House Manager for the buffet at the Atlantis Casino.  After 11 months, she decided she wanted to be her own boss again and open an Italian restaurant in South Reno.  Her culinary vision was to combine the professional techniques she had acquired at the CIA with the culinary tradition she had learned working with Chef Chemel to create a destination restaurant offering authentic Italian food and featuring old world wines from Italy.  Un Caffe’ Italian Bistro opened its doors on May 21, 2012 and will be celebrating its third anniversary in May 2015.
